Step 5 is about sewing. Place 2x body parts right sides facing eachother and stitch all around edges and leave 3 cm spaces for turning over and stuffing. Once turned over and stuffed, try to make little invisible stitches for closing. It does not have to end up looking perfect at first. Remember you'll put clothes on your plushie guy.
I have to ask you though I was following your guide today for making my own plushie and I can't seem to figure out how to sew on the hair and the soles of the feet. Especially the hair. I have my peices cut out but I have no clue where to start with the sewing...

Ok, It's no bother man! ask wathever you want.. I'm glad to help!
1) For the hair: once you've cut both front and back sides of the hair of your plushie, which must be different of course, you may either face right sides facing eachother and sew with little stitches so you can then turn over (it ususally ends up looking like a helmet kind of!) or place both pieces right sides out and sew with very neat stitches (you may need to have good pulse so it looks cool) and then to glue it to the head of the doll.
2) For the soles of the feet: I find it easier to sew both sides of the legs first (try to double stitch the lower ends so these don't separate when pulling for placing the sole between them) and then to sew the sole. (You may redesign the sole pattern several times until you come up with one that fits the boot completely, it's ok.)

Firm stitches will do fine. You can try sewing the top of the torso 1 cm behind the bottom of the head. Then, you can reinforce with large stitches from the mid back of the torso (in side) to the base of the head until you have if firmly placed the way you want it. It's ok if you'll put clothes on the doll, these stitches won't get to be seen. You'll end up improving your technique though. I hope it helps!

You can try both stitching or using a sewing machine.. it is really up to you. I usually sew the eyes with lil stitches or by using glue.
